Ingredients

  • 14 ounces turkey kielbasa
  • 1 pound asparagus
  • 1 teaspoon sea salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large orange bell pepper
  • 2 tablespoons olive oil
  • 1 1/2 cups 8 ounces grape tomatoes, halved

Instructions

  1. 1

Begin by preheating your oven to 400°F. Prepare a baking sheet measuring 20 × 14 inches, or if you prefer, use two smaller pans that are 14 × 10 inches each, lining them with foil and applying a generous amount of grease.

  2. 2

Place the kielbasa slices on the baking sheet in a single, even layer. Allow them to roast in the oven for approximately 12 to 15 minutes, or until they develop a nice brown color on the underside.

  3. 3

While the kielbasa is cooking, take a large mixing bowl and combine all of your vegetables.

  4. 4

In a separate small bowl, combine the oil, sea salt, Italian herbs, paprika, garlic powder, and black pepper. Whisk these ingredients together until well blended, then pour the mixture over the vegetables and toss everything to ensure an even coating.

  5. 5

Once the kielbasa has finished roasting, carefully take the pan out of the oven, but keep it heated. Turn the kielbasa pieces over and shift them to one side of the baking sheet, making space for the vegetables.

  6. 6

On the opposite side of the pan, or in the second pan if you opted for two, spread the seasoned vegetables out in a single layer.

  7. 7

Return the pan to the oven and let everything roast for an additional 18 to 20 minutes, until the vegetables are tender and the kielbasa has achieved a deeper golden brown.
