Ingredients

  • 8 large eggs
  • 3 tablespoons mayonnaise
  • 1/8 teaspoon salt
  • fresh black pepper
  • Optional toppings or add ins: minced bacon bits
  • paprika
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dill pickle juice
  • fresh dill

Instructions

  1. 1

Begin by setting your air fryer to a temperature of 250°F. Place the eggs inside and allow them to cook for 15 to 16 minutes. Once the time is up, immediately run cold water over the eggs to halt the cooking process. (NOTE: If you don’t have an air fryer, refer to my stovetop method for hard-boiled eggs).

  2. 2

Carefully remove the shells from the eggs and chop them into pieces, then transfer the chopped eggs to a medium mixing bowl.

  3. 3

Incorporate the mayonnaise, Dijon mustard, pickle juice, salt, and pepper into the bowl, then combine everything thoroughly. Serve this mixture on slices of sourdough bread, toasted bread, or rice crackers, and finish with a sprinkle of paprika and a garnish of dill before serving.
