Begin by preheating your oven to 425°F (220°C). Lightly coat a baking sheet with cooking spray to prevent sticking.
In a small bowl, pour in the egg whites and whisk them thoroughly until frothy.
In a separate bowl, combine the breadcrumbs and Parmesan cheese, stirring well to ensure they are evenly mixed.
Take a 1/3 cup measuring cup and use it to shape the mashed potatoes into 8 evenly-sized patties.
Apply a layer of egg whites onto each patty using a brush, or you can opt to use your hands for a more personal touch. After that, dip each patty into the breadcrumb and cheese mixture. Arrange the patties on the prepared baking sheet and give the tops a quick spray with additional cooking spray.
