Ingredients

  • 2 2/3 cups cold leftover skinny garlic mashed potatoes
  • cooking spray
  • 1/3 cup Italian seasoned breadcrumbs
  • 2 large egg whites
  • 1/3 cup Parmesan cheese

Instructions

  1. 1

Begin by preheating your oven to 425°F (220°C). Lightly coat a baking sheet with cooking spray to prevent sticking.

  2. 2

In a small bowl, pour in the egg whites and whisk them thoroughly until frothy.

  3. 3

In a separate bowl, combine the breadcrumbs and Parmesan cheese, stirring well to ensure they are evenly mixed.

  4. 4

Take a 1/3 cup measuring cup and use it to shape the mashed potatoes into 8 evenly-sized patties.

  5. 5

Apply a layer of egg whites onto each patty using a brush, or you can opt to use your hands for a more personal touch. After that, dip each patty into the breadcrumb and cheese mixture. Arrange the patties on the prepared baking sheet and give the tops a quick spray with additional cooking spray.

  6. 6

Place the baking sheet in the oven and bake for 15 minutes, or until the underside turns a lovely golden brown. Carefully flip the patties and continue baking for another 10-12 minutes, ensuring both sides are beautifully golden.
