Ingredients

  • 1 teaspoon unsalted butter
  • 1/4 cup chopped onion
  • 1 tablespoon corn starch
  • 1/2 cup low sodium chicken or turkey broth
  • 1 1/4 cups leftover shredded cooked turkey breast
  • 3/4 cup frozen peas and carrots
  • 3/4 teaspoon kosher salt
  • 1/8 tsp ground black pepper
  • 1/2 tsp dried thyme
  • 10 frozen Goya Empanada Discos

  • 1 large egg
  • 1 clove garlic
  • 1/4 cup chopped celery
  • 2 tablespoons chopped fresh parsley

Instructions

    Begin by warming a skillet over medium heat and allowing butter to melt. Once melted, add the chopped onion, celery, and parsley, sautéing until the onions become translucent. Incorporate the minced garlic and continue cooking for another minute.

    In a separate bowl, whisk together the broth and cornstarch until well combined.

    Stir in the turkey along with the frozen peas and carrots, then add 3/4 teaspoon of salt, pepper, thyme, and the broth mixture. Mix well and cook over medium heat, bringing the mixture to a boil. Allow it to cook until it thickens and is heated throughout, about 2-3 minutes.

    Roll out a disc on your work surface. Spoon 2 tablespoons of the turkey filling into the center of each disc. Using a pastry brush, apply the egg wash to the edges of the disc. Fold the disc over to encase the filling and gently press the edges together to seal. To ensure a tight closure, use a fork to crimp the edges.

    Coat one side of each empanada with the egg wash using the pastry brush.

    Lightly spray a baking sheet with oil, then place the empanadas on it. Bake in a preheated oven at 350°F for 26 to 30 minutes, or until they achieve a golden-brown color.

    Prepare the air fryer basket by spraying it with oil to prevent sticking. Transfer the empanadas in batches into the basket and cook at 380°F for 8 minutes, flipping them halfway through the cooking time. Serve hot.
