Ingredients

  • 2 3/4- inch 1 oz piece fresh ginger, peeled and finely chopped
  • 3 1/2 cups water
  • zest of three lemons
  • 10 ultra thin half slices lemon
  • 5 tablespoons lemon juice
  • 3/4 cup sugar

Instructions

    In a small saucepan, combine the ginger, water, sugar, and lemon zest, then heat the mixture until it begins to simmer gently.

    Allow the mixture to simmer until the sugar has completely dissolved, then remove the saucepan from the heat and let it cool to room temperature.

    Strain the mixture through a fine mesh sieve, using the back of a spoon to press down on the ginger to extract as much liquid as possible. Stir in the lemon juice.

    Carefully transfer the liquid into your ice pop molds, ensuring to leave a 1/4 inch gap at the top to accommodate expansion during freezing.

    If desired, place a lemon slice in each mold, then insert the sticks and transfer to the freezer to solidify.
