Ingredients

  • 16 ounces baby red or yukon gold potatoes
  • black pepper
  • grated lemon zest of 1/2 lemon
  • 1/2 tablespoon finely chopped flat leaf parsley
  • 1 piece Reynolds Wrap heavy duty foil
  • 1 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • kosher salt

Instructions

    In a sizable mixing bowl, combine the potatoes with olive oil, garlic powder, 1/2 teaspoon of salt, and black pepper according to your preference. Mix thoroughly to ensure all the potatoes are well-coated.

    Lay out a large piece of heavy-duty foil, measuring 18 x 18 inches, on a flat surface.

    Spoon the potato mixture into the center of the foil. Create a packet by folding the short edges of the foil together and sealing them with two folds, making sure to leave some space inside for steam to circulate.

    Place the packet on the grill, covering it and cooking over medium heat for 30 minutes. Remember to shake the packet every 10 minutes to prevent the potatoes from burning on the bottom. When done, carefully open the packet and sprinkle with 1/8 teaspoon of salt, lemon zest, and parsley.

    Alternatively, bake the packet in a preheated oven at 400°F for 35 to 40 minutes, giving it a shake halfway through. Once baked, open the packet carefully and add 1/8 teaspoon salt, lemon zest, and parsley on top.
