Ingredients

  • 5 ounces avocado
  • 1/2 teaspoon kosher salt
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 4 cups baby arugula
  • 1 heirloom tomato
  • 1 cup sliced hearts of palm,
  • 1/4 cup red onion

Instructions

    In a medium-sized bowl, combine the onions and sprinkle with 1/4 teaspoon of Kosher salt. Set this mixture aside while you prepare the other components of the salad.

    To the bowl with the onions, incorporate the hearts of palm and diced tomato. Squeeze in 2 tablespoons of fresh lemon juice, then drizzle with 2 tablespoons of extra virgin olive oil, and season with 1/4 teaspoon of salt along with freshly cracked black pepper.

    In a large salad bowl, place the arugula and artfully arrange the avocado slices on top.
