Ingredients

  • kosher salt and black pepper
  • 1- 1/2 cups cooked lentils
  • 2 ounces sliced avocado
  • 1/2 cup halved grape tomatoes
  • chopped cilantro
  • squeeze of lime
  • 3 large hard boiled eggs
  • few dashes Cholula hot sauce

Instructions

    In a mixing bowl, combine 3/4 cup of lentils. Drizzle with a splash of lime juice, then season with salt and pepper according to your preference. Arrange three halves of boiled eggs on top, followed by 1 ounce of diced avocado and a sprinkle of fresh cilantro. Add an extra pinch of salt and pepper before drizzling with hot sauce. Dig in and savor the flavors!
