Ingredients

  • 4 slices center cut bacon
  • 1 tablespoon whipped butter
  • 3/4 tsp kosher salt
  • fresh black pepper
  • 2 tablespoons minced fresh chives
  • 1/4 cup shredded reduced fat shredded cheddar
  • 3 cloves crushed garlic
  • 1/3 cup 1% buttermilk
  • 6 cups about 24 oz cauliflower florets

    In a skillet, cook the bacon until it reaches a crispy texture; remove it and place it on a paper towel to absorb excess grease, then crumble it into pieces.

    In a large pot, add water and bring it to a rolling boil. Once boiling, introduce the cauliflower and garlic. Allow them to cook until the cauliflower becomes tender, which should take approximately 15-20 minutes. Drain the mixture and return it to the pot.

    Preheat your oven to 350°F (175°C).

    To the cauliflower, incorporate the buttermilk, butter, salt, and pepper. Use an immersion blender to purée the mixture until smooth. If you lack an immersion blender, a standard blender can be used as an alternative.

    Stir in 1 tablespoon of chives and distribute the mixture into four individual casserole dishes (each holding about 3/4 cup) or one 8 x 8 inch baking dish. Sprinkle the top with cheddar cheese and the crumbled bacon.

    Place the dish in the oven and bake until the cheese is melted and bubbly, which should take around 5 minutes. After removing from the oven, garnish with the remaining chives.
