Ingredients

  • 18 Super Moist Low Fat Chocolate Cupcakes
  • 1 tsp white vanilla extract
  • 1 tbsp boiling water
  • 36 m&m's
  • 2 cups confectioners' sugar
  • 1/4 cup light butter

Instructions

    Begin by preparing my basic recipe for Super Moist Low Fat Chocolate Cupcakes, omitting any chocolate frosting.

    Once the cupcakes are baked and have cooled completely, you can proceed to add the frosting.

    To make the frosting: mix together confectioners’ sugar, melted light butter, vanilla extract, and just enough water to reach your desired consistency, starting with 1 tablespoon and adding more as necessary.

    Transfer the frosting into a piping bag, snip off the end, and pipe it onto the cupcakes. (A decorative tip is optional, but feel free to use one if you prefer!)

    While the frosting remains wet, gently press two M&M's (with the letter side facing down) of the same color onto each cupcake to form the eyes.

Notes & Tips

  • *Note: Some "light" butters have yellow coloring added which will effect the color of the icing, Land O Lakes Light is a good option. Also, dark vanilla will effect the color, use clear to keep it white.
