Ingredients

  • 1 1/4 lbs butternut squash
  • kosher salt and freshly ground black pepper
  • 1/2 tbsp olive oil or coconut oil
  • 2 1/2 tbsp pure maple syrup

Instructions

    Begin by setting your oven temperature to 400°F.

    In a spacious mixing bowl, combine the butternut squash with oil, maple syrup, salt, and freshly ground pepper. Transfer the mixture into a baking dish, cover it with aluminum foil, and place it in the middle of the oven to roast for 25 minutes.

    After 25 minutes, carefully remove the foil, give the squash a turn, and continue baking for an additional 15 minutes, or until it is tender enough to be pierced with a fork (note that cooking time may vary based on the size of your squash pieces).
