  • 2 lbs 4 medium sweet potatoes, peeled & cubed
  • 3 cloves garlic
  • 1/2 cup 1% milk
  • 2 tbsp light sour cream
  • salt and fresh cracked ground pepper
  • 1 tbsp butter

Instructions

    Begin by placing sweet potatoes in a sizable pot filled with salted water. Bring to a boil and cook until the potatoes are tender. Once done, pour them into a colander to drain.

    In the meantime, melt butter in a skillet and cook minced garlic over medium heat until it turns a light golden brown.
