  • 4 fat free matzo crackers
  • 2 medium tomatoes
  • a few thin slices of red onion
  • 12 black olives
  • 1/4 cup fresh basil for topping
  • 1/2 tsp dried oregano
  • 1 cup reduced fat shredded mozzarella
  • 6 tbsp crushed tomatoes

Instructions

  1. 1

Begin by setting your oven temperature to 375°F.

  2. 2

Position a rack on top of a baking sheet.

  3. 3

Evenly distribute 1 1/2 tablespoons of crushed tomatoes over each piece of matzo.

  4. 4

Be cautious not to overdo it, as excess sauce may lead to a soggy base.

  5. 5

Sprinkle oregano generously, followed by layering with diced tomatoes and onions.

  6. 6

Add 1/4 cup of cheese to each matzo, along with olives, then place them in the oven and bake until the cheese is melted, which should take approximately 5-6 minutes.
