Coat the pork tenderloin with olive oil and apply the adobo seasoning evenly. Allow it to rest for approximately 30 minutes.
In the meantime, get the grill heated to a high temperature, or alternatively, preheat the broiler. Generously sprinkle salt over the pork.
Cook the pork on the grill or under the broiler on high until a meat thermometer inserted into the thickest part shows 145°F, which should take around 20 to 22 minutes, turning the meat a few times during cooking.
After cooking, allow the pork to rest for about 5 minutes before slicing it into 8 pieces.
