Ingredients

  • 4 cups cauliflower crumbles
  • 1 jalapeno
  • 2 garlic cloves
  • 2 tablespoons tomato paste
  • ½ teaspoon cumin
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • chopped cilantro
  • 1 teaspoon olive oil
  • 2 medium plum tomatoes
  • 1/2 medium onion

Instructions

    In a spacious skillet, warm the oil over a medium-high flame. Once it’s hot, toss in the onions, tomatoes, and jalapeño. Sauté these ingredients until they soften slightly, which should take approximately 2-3 minutes. Next, incorporate the garlic and cauliflower, continuing to sauté until the cauliflower is tender, about 2 minutes.

    Mix in the tomato paste along with the cumin, paprika, cayenne, salt, and pepper. Stir everything together to ensure the vegetables are well-coated and allow it to cook for another minute or until everything is heated through. Finally, fold in the chopped cilantro and your dish is ready to be served.
