Preheat your oven to 350°F. Lightly coat 12 compartments of a muffin tin with olive oil spray.
Lay a sheet of phyllo pastry on a clean, flat surface and gently mist it with olive oil. Place another phyllo sheet on top, and repeat this process with two additional sheets, applying oil each time.
Slice the stacked phyllo into 4-inch squares. Press one square into each of the greased muffin cups. Continue this until you have filled all 12 cups with phyllo.
Distribute approximately 1 tablespoon of diced ham into each phyllo cup.
In a mixing bowl, whisk together yogurt, egg, salt, and pepper until the mixture is smooth. Pour this mixture evenly into each phyllo cup, aiming for just under 1/4 cup per cup.
Sprinkle 1 tablespoon of cheese on top of each filled phyllo cup and place them in the oven. Bake for about 30 minutes, or until the egg is firm and the phyllo has turned a golden brown.
