Ingredients

  • 1 pound skin-on wild salmon
  • 1 teaspoon grated ginger
  • 1 scallion
  • 1/4 cup white miso
  • 1/2 cup mirin
  • 2 garlic cloves

Instructions

    In a small mixing bowl, blend together miso paste, mirin, minced garlic, and grated ginger until well combined.

    Pour a quarter of this marinade into a shallow dish or a glass pie plate, then place the salmon fillet skin-side up. Pour the remaining marinade over the fish, ensuring it is well-coated. Cover the dish with plastic wrap and refrigerate, allowing the salmon to marinate for a minimum of 6 hours, or preferably overnight.

    Take the marinated salmon out of the refrigerator 30 minutes prior to cooking. Preheat your oven to the broil setting on high.

    Carefully transfer the salmon onto a sheet pan that has been lined with aluminum foil. Discard any leftover marinade.

    Position the salmon on the second rack from the top in the oven and broil for 6 to 7 minutes, or until the fish flakes easily when tested with a fork.

    If you prefer to serve the salmon without the skin, gently slide a fish spatula between the skin and the flesh to separate them.
