Begin by preheating your oven to 350°F (175°C).
Prepare a baking sheet by lining it with a silicone mat or parchment paper. If opting for parchment, lightly spray it with cooking oil to prevent sticking.
In a medium-sized mixing bowl, combine cream cheese, shredded cheddar, grated Parmesan, and chopped scallions. Use a small spoon or spatula to generously fill each jalapeno with the cheese mixture.
In another medium bowl, mix together the flour, baking powder, and salt, whisking thoroughly. Incorporate the yogurt and blend with a fork or spatula until the mixture resembles small crumbs.
Sprinkle some flour onto a clean work surface and transfer the dough from the bowl. Knead the dough gently for about 15 turns until it becomes smooth and slightly tacky, without being sticky (it should not leave residue on your hands).
Dust both the work surface and a rolling pin with additional flour.
Roll the dough out into a thin rectangle measuring approximately 13 x 9 inches. Cut the rolled dough into slices that are 1/2 inch thick.
Carefully wrap each slice of dough around the halved jalapenos, ensuring to leave space for the eyes, and arrange them on the prepared baking sheet. Continue this process with the remaining jalapenos and dough.
Brush the tops of each wrapped jalapeno with an egg wash and place them in the oven to bake for 30 minutes, or until the peppers are heated through and the dough is golden brown.
Once baked, add the eyes to your mummies and serve them warm on a platter.
