Dice the potatoes into small chunks, approximately 1 inch by 1/2 inch. Since they require the longest cooking time, cutting them into smaller pieces helps ensure that all ingredients cook uniformly.
Preheat your oven to 375°F.
Lightly coat a large non-stick baking sheet, or two smaller ones, with olive oil spray to avoid sticking.
In a sizable mixing bowl, combine the diced potatoes, onions, bell peppers, olive oil, salt, pepper, rosemary, and garlic powder. Stir thoroughly to ensure all the ingredients are evenly coated with oil and seasonings. Transfer the mixture onto the prepared baking sheet and position it in the center of the oven; roast for 15 minutes.
After 15 minutes, use a spoon to gently toss the mixture to prevent sticking or burning.
Add the sausage to the baking sheet containing the potatoes and vegetables, and continue roasting, stirring once or twice, for an additional 25-35 minutes, or until the potatoes are tender and fully cooked.
Keep in mind that cooking times may vary based on the thickness of your potato pieces and sausage; monitor them closely to avoid burning.
