Ingredients

  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1.3 lb 93% lean ground turkey
  • 1 medium onion
  • 3 cloves minced garlic
  • 1 red bell pepper
  • 10 oz can rotel tomatoes with green chilies
  • 14.5 oz can pink or red beans
  • 8 oz tomato sauce
  • 1/2 can
  • 1 15 oz can reduced sodium chicken broth*
  • 1 3/4 cups water
  • 8 oz DeLallo Gluten Free shells
  • 3/4 cup part-skim shredded sharp cheddar cheese*
  • 2 tbsp fresh cilantro
  • 2 tbsp chopped scallions

  • 1 tsp kosher salt
  • 1 1/2 tsp cumin
  • 1 1/2 tsp paprika

Instructions

    In a sizable Dutch oven or deep pot with a lid, warm over medium-high heat and lightly coat with cooking spray. Add the ground turkey, breaking it apart with a wooden spoon as it browns.

    Once the turkey is fully cooked, incorporate the diced onions, minced garlic, chopped pepper, and taco seasoning; sauté for 2-3 minutes.

    Pour in the canned tomatoes, beans, tomato sauce, refried beans, chicken broth, and water.

    Increase the heat until the mixture reaches a boil, then cover and reduce to a simmer for approximately 15 minutes. Taste and adjust the salt as needed.

    Mix in the dry pasta and continue to simmer uncovered over medium heat until it reaches an al dente texture, about 6 minutes or according to the instructions on the pasta package.

    Take the pot off the heat and sprinkle the cheese on top, then cover and let it rest for about 2-3 minutes to allow the cheese to melt.
