  • 1 small chopped onion
  • 28 oz can crushed tomatoes

  • pecorino romano cheese rind
  • 1 Large

  • black pepper
  • 3 cloves crushed garlic

    In a skillet, brown the ground beef along with diced onion, minced garlic, salt, and pepper until the meat is cooked through. Incorporate crushed tomatoes, a bay leaf, and a piece of cheese rind, stirring to combine. Carefully poke holes into the spaghetti squash using a knife and position it atop the sauce mixture. Seal the lid and pressure cook for 15 minutes on high, or until the squash skin yields easily to a gentle press from a spoon. Allow the pressure to release naturally, then remove the bay leaf and cheese rind. Transfer the spaghetti squash to a bowl, setting it aside to cool.

    Once the squash has cooled enough to handle, slice it in half using a large knife, discarding the seeds inside. Use a fork to scrape out the spaghetti-like strands and place them in a colander to drain thoroughly (I recommend using paper towels to absorb any remaining moisture).
