Ingredients

  • 1 small orange
  • salt and fresh pepper
  • 2 cups baby greens such as arugula and spinach
  • 3 tbsp crumbled gorgonzola cheese
  • 2 - 3 slices red onion
  • 1 tsp extra virgin olive oil
  • 1/2 tsp honey
  • 1 tsp balsamic vinegar

Instructions

    Extract the juice from 2 segments of the orange into a small bowl, then combine it with the balsamic vinegar, olive oil, honey, salt, and pepper, whisking until well mixed.

    Chop the leftover orange segments into small, bite-sized pieces.
