  • 6 slices center-cut bacon
  • 3 cups low sodium chicken broth
  • 2 cups packed baby spinach
  • ¼ cup freshly grated parmesan
  • 1 medium lemon
  • Freshly ground black pepper
  • 1 cup frozen peas
  • 1 cup dry orzo
  • 1 leek

    In a large, heavy-bottomed saucepan or Dutch oven, add the diced bacon. Cook over medium-high heat for approximately 6 to 8 minutes, or until the bacon reaches a crispy texture.

    Introduce the leeks to the pot and sauté for about 3 to 4 minutes, or until they become tender. Then, incorporate the peas and continue to sauté for an additional minute.

    Mix in the orzo along with the chicken broth, stirring well to combine. Bring this mixture to a boil, then lower the heat to medium-low and let it simmer for 10 minutes. Be sure to stir occasionally, scraping the bottom of the pot to prevent the orzo from sticking.
