In a large, heavy-bottomed saucepan or Dutch oven, add the diced bacon. Cook over medium-high heat for approximately 6 to 8 minutes, or until the bacon reaches a crispy texture.
Introduce the leeks to the pot and sauté for about 3 to 4 minutes, or until they become tender. Then, incorporate the peas and continue to sauté for an additional minute.
Mix in the orzo along with the chicken broth, stirring well to combine. Bring this mixture to a boil, then lower the heat to medium-low and let it simmer for 10 minutes. Be sure to stir occasionally, scraping the bottom of the pot to prevent the orzo from sticking.
Once cooked, remove the pot from the heat and add the spinach, stirring it in. Cover the pot for a few minutes, allowing the spinach to wilt. Serve topped with parmesan cheese, lemon zest, and freshly ground black pepper, accompanied by lemon wedges on the side.
