Begin by preheating your oven to 400°F. Sprinkle 1 teaspoon of kosher salt over the chicken pieces to season them.
Prepare a baking sheet by lining it with aluminum foil, then position a rack on top. Lightly mist the rack with cooking oil.
In a food processor or chopper, pulverize the bran cereal until it reaches a fine consistency.
In a mixing bowl, blend the crushed cereal with the remaining salt, paprika, garlic powder, black pepper, and cayenne pepper until well combined.
Transfer the mixture to a shallow dish or a ziplock bag for easy coating.
In a separate bowl, whisk together mayonnaise and Dijon mustard until smooth.
Using a basting brush, apply the mayonnaise-mustard mixture onto the chicken, ensuring even coverage, then dredge the chicken in the crushed cereal mixture.

Finally, lightly spray the tops of the chicken with oil and air fry at 370°F for 22 to 24 minutes. Turn the chicken halfway through the cooking time, spraying the tops again, until the coating is crispy and the chicken is thoroughly cooked.
