Season the chicken pieces with salt and freshly ground pepper. In a large pot or Dutch oven, warm the oil over medium-high heat.
Introduce the oil along with chopped onions and bell peppers into the pot. Cook on medium heat for about 8 to 10 minutes, stirring occasionally, until the vegetables are tender. Add minced garlic and continue to sauté for an additional 1 to 2 minutes.
In a separate bowl, combine the flour and paprika, then gradually whisk in the broth. Pour this mixture into the pot along with the bay leaves.
Incorporate the seasoned chicken into the pot and stir gently to combine. Bring the mixture to a rolling boil, then reduce the heat to a low simmer.
Give it another stir, then cover the pot with a lid. Allow it to simmer for 45 to 50 minutes.
