Start by setting your oven temperature to 400°F. Slice the brussels sprouts in half lengthwise.
In a mixing bowl, blend the brussels sprouts with olive oil, garlic powder, Italian herbs, and a pinch of salt.
Line a baking sheet with parchment paper, then generously mist it with olive oil. Sprinkle a layer of freshly grated parmesan cheese on the bottom of the sheet pan, ensuring to leave about an inch of space around the edges.
Arrange the brussels sprouts on top of the parmesan, cut side facing down, making sure to keep them snugly packed together.
Roast the sprouts in the middle of the oven for 25 to 30 minutes, adjusting the time based on the size of the sprouts, until the bottoms achieve a golden-brown crispiness and they are tender when tested with a knife.
