Ingredients

  • 1 lb thin asparagus
  • 6 oz uncooked pasta such as Ronzoni Smart Taste or Dreamfields
  • 1 large egg yolk
  • 1/4 cup freshly grated Parmigiano-Reggiano cheese
  • salt and fresh cracked pepper
  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic

    Bring a large pot of water seasoned with salt to a rolling boil, using about 4 cups.

    Once the water is bubbling, introduce the asparagus and cook for 3-5 minutes, until they reach a tender-crisp texture.

    Drain the asparagus using a colander, but be sure to save 1 cup of the cooking liquid before discarding the rest.

    Refill the pot with salted water, cover it, and bring it back to a boil for the pasta.

    When the water is boiling, add the pasta and follow the package instructions to achieve an al dente texture.
