  • 1 1/2 lbs broccoli florets
  • 1/4 cup fresh grated Pecorino Romano
  • 2 tbsp extra virgin olive oil
  • kosher salt and fresh pepper
  • 6-8 cloves garlic

Instructions

    Begin by heating your oven to 450°F.

    In a baking dish, mix together the broccoli florets, olive oil, minced garlic, salt, and pepper.

    Place the broccoli in the oven and roast for approximately 20 minutes, giving it a stir halfway through, until it achieves a golden-brown color and is tender.

    At the same time, bring a large pot of salted water to a rolling boil.

    Prepare the pasta by following the cooking instructions on the package until it reaches an al dente texture.

    Just before draining, set aside 1 cup of the pasta water.
