Using a clean kitchen towel, press out any excess moisture from the sauerkraut. Set it aside for later use.
Lay 1 egg roll wrapper on a clean, dry countertop, positioning it so that the corners form a diamond shape.
On the lower third of the wrapper, place ¾ ounce (2 tablespoons) of pastrami, followed by 2 tablespoons of cheese and 2 tablespoons of sauerkraut.
Gently lift the bottom point closest to you and wrap it around the filling ingredients.
Moisten your fingertip with water from a small bowl and run it along the edges of the wrapper to help seal it.
Fold the left and right corners inward toward the center and continue rolling the wrapper tightly into a cylinder shape.
Continue this process with the remaining filling and wrappers.
Preheat the air fryer to 370 degrees Fahrenheit.
Lightly coat all surfaces of the egg rolls with oil, using your hands to ensure an even distribution.
Cook the egg rolls in batches for 10 minutes, turning them halfway through, or until they achieve a golden brown and crispy texture.
In the meantime, mix the ingredients for the dressing in a small bowl.
Serve the egg rolls hot, either with the dressing on the side or drizzled over the top.
For oven baking, preheat to 400 degrees Fahrenheit and cook for 12 to 16 minutes, flipping them halfway through the cooking time.
If cooking from frozen, set the oven to 375 degrees Fahrenheit and bake for 18 to 20 minutes, turning them halfway through.
