Ingredients

  • 2 medium ripe bananas
  • *Use gluten free oats such as Bob's Red Mill quick oats to make them gluten free.
  • 2 tbsp chunk peanut butter
  • 4 teaspoons reduced sugar jelly
  • 1 cup of uncooked quick oats*

Instructions

    Begin by heating your oven to 350°F. Prepare a non-stick cookie sheet by either applying cooking spray or lining it with a Silpat mat.

    In a medium-sized mixing bowl, mash the bananas and blend them with the peanut butter until smooth.

    Incorporate the oats into the mixture, stirring well until everything is evenly combined.

    Using a tablespoon, drop heaping spoonfuls of the batter onto the prepared cookie sheet, pressing the back of the spoon to create a small indent. Continue this process until you have formed 16 cookies.

    Bake in the preheated oven for about 15 minutes, or until they turn a lovely golden brown. Once done, take them out and place 1/4 teaspoon of jelly on top of each cookie.
