
Crafted from only four simple ingredients—bananas, oats, peanut butter, and jelly—these delightful cookies are best enjoyed fresh from the oven. They offer a playful twist on my three-ingredient healthy cookie concept, making for a tasty treat that's both nourishing and satisfying.

Begin by heating your oven to 350°F. Prepare a non-stick cookie sheet by either applying cooking spray or lining it with a Silpat mat.
In a medium-sized mixing bowl, mash the bananas and blend them with the peanut butter until smooth.
Incorporate the oats into the mixture, stirring well until everything is evenly combined.
Using a tablespoon, drop heaping spoonfuls of the batter onto the prepared cookie sheet, pressing the back of the spoon to create a small indent. Continue this process until you have formed 16 cookies.
Bake in the preheated oven for about 15 minutes, or until they turn a lovely golden brown. Once done, take them out and place 1/4 teaspoon of jelly on top of each cookie.
