Introduce the peaches along with the brown sugar and cinnamon to the skillet, stirring to blend the ingredients. Allow the mixture to cook undisturbed for 1 minute. Stir and continue to cook for another minute. Once done, transfer the mixture to a bowl or plate and let it cool for 5 minutes.
Divide 1 cup of cottage cheese between 2 bowls, scooping evenly.
Spoon half of the peach mixture onto each bowl and sprinkle 1 tablespoon of pistachios over the top. If you wish, drizzle with honey for added sweetness.
