Begin by preheating your oven to 325°F. Prepare a standard muffin pan by placing 12 liners inside the cups.
In a bowl, thoroughly mash the bananas and set the mixture aside.
In a separate medium bowl, whisk together the flour, baking soda, and salt until well combined. Set this mixture aside as well.
In a large mixing bowl, use an electric mixer to cream together the butter and sugar until smooth and fluffy.
Incorporate the egg whites, mashed bananas, applesauce, vanilla extract, and 8 tablespoons of peanut butter into the butter-sugar mixture. Beat at medium speed until the mixture becomes thick, making sure to scrape down the sides of the bowl as needed.
Gently fold in the flour mixture, mixing at a low speed until just combined. Be careful not to overmix the batter.
Divide the batter evenly into the muffin tin, filling each cup halfway. Then, place 1/2 teaspoon of the remaining peanut butter in the center of each muffin.
Finish filling the muffin cups with the remaining batter, then bake in the center of the oven for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
