Ingredients

  • 2 beef tenderloin filet mignon steaks, trimmed of fat
  • kosher salt and fresh cracked pepper
  • olive oil cooking spray

Instructions

    Allow the steaks to sit on the counter for at least 30 minutes prior to cooking, enabling them to reach room temperature.

    Set your oven to preheat at 400°F.

    Lightly coat the steaks with olive oil on all sides, then generously sprinkle kosher salt and black pepper over both surfaces.

    Once the oven is heated, place a heavy skillet or cast iron skillet on high heat until it becomes extremely hot.

    When the skillet is ready, add the steaks and let them sear without moving for 2 1/2 minutes. Flip the steaks and continue cooking for an additional 2 to 2-1/2 minutes.

    Sear the edges of the steaks for approximately 1 minute, ensuring they are browned uniformly.

    Transfer the steaks to the oven for about 4 to 5 minutes, then use a meat thermometer to check the internal temperature by inserting it into the side of the steak.

    Take the steaks out when they register 125°F for Medium Rare or 130°F for Medium.

    Allow the steaks to rest for 5 to 10 minutes before serving, as the internal temperature will rise by 5 to 10 degrees after being removed from the oven.
