Ingredients

  • 2 medium zucchini
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tbsp red wine vinegar

Equipment Needed

  • Grill Pan (I love this OXO one for "grilling" indoors!)
  • Tongs (These ones are long enough to keep away from heat)

Instructions

    Begin by heating your grill to a medium-high setting. In a spacious mixing bowl, combine the zucchini with olive oil, red wine vinegar, chopped parsley, fresh basil, and garlic powder. Add 1/4 teaspoon of salt and adjust with black pepper according to your personal preference.

    Once the grill reaches the desired temperature, take a paper towel soaked in oil and, using tongs, carefully wipe it across the grill grates to clean them.

    With the help of tongs, place the seasoned zucchini onto the grill. Close the lid and allow them to cook for 2 to 3 minutes. Afterward, flip them over and continue grilling, covered, for an additional 2 to 3 minutes.

    When the zucchini becomes tender, take them off the grill. Taste to check the seasoning, adding more salt if necessary, and enjoy them immediately.
