Add the onions along with a sprinkle of salt, and sauté for about 5 minutes until they become tender. Next, incorporate the bell peppers, garlic, tomato, and kielbasa, cooking for an additional 5 to 7 minutes. Stir in the spinach and continue cooking until it just wilts, roughly 1 minute. Remove from heat and set aside.
In a large mixing bowl, combine the eggs, egg whites, milk, flour, salt, and pepper. Whisk together until the mixture is completely smooth.
