I make Crock Pot Picadillo all the time in my house (Madison's number one request), and because it makes so much I like to get creative with my leftovers. I came up with this quesadilla for lunch one day and my husband said I should put it on the blog, so I thought with Cinco De Mayo coming, it would be fun to do some Cuban-Mexi fusion.

Picadillo Quesadillas

These quesadillas, inspired by Cuban flavors, are generously stuffed with savory beef picadillo, fresh pico de gallo, and gooey cheese. They’re absolutely delicious and an excellent way to repurpose any leftovers!

Ingredients

  • 1 tbsp chopped cilantro
  • cooking spray
  • 2 flour tortillas
  • 6 tbsp shredded reduced fat cheddar jack
  • 1/2 cup leftover picadillo
  • juice from 1/2 lime
  • 1 tbsp chopped tomato
  • 1 tbsp chopped scallion

Instructions

    In a small bowl, mix together the ingredients for the quick pico de gallo.

    Place a nonstick skillet on the stove and set the heat to medium. Lightly coat the skillet with cooking spray, then add a tortilla to the pan.

    Cook the tortilla for approximately 2 minutes on each side until it is golden brown, then spread 1/4 cup of picadillo onto one half of the tortilla.

    Sprinkle cheese over the picadillo, followed by half of the pico de gallo. Fold the tortilla in half and gently press down with a spatula. Cook for an additional 1 to 2 minutes on each side, until the cheese is fully melted and the tortilla achieves a crispy texture.

    Take the quesadilla off the heat and slice it into three pieces. Continue with the remaining ingredients. Serve while hot!
