Ingredients

  • 1 lb boneless skinless chicken breast
  • 1 tsp garlic
  • 1 tsp fresh ginger
  • 2 cups bell peppers
  • 1 red chili pepper
  • 1 cup fresh pineapple chunks
  • 1/3 cup Thai sweet chili sauce
  • cilantro leaves
  • 1 tbsp fish sauce
  • 2 tbsp cornstarch
  • 1 tbsp oil

    In a medium-sized bowl, combine the chicken and fish sauce. Sprinkle in the cornstarch and toss everything together until the chicken is well-coated. Set this mixture aside for later use.

    In a large nonstick skillet, heat 1/2 tablespoon of oil over medium-high heat.

    Once the oil is hot, add the minced garlic and grated ginger; stir-fry for about 30 seconds.

Pour in the sauce and cook, stirring, until everything is heated through. Then, remove the mixture from the skillet.

    Add the remaining oil to the skillet and heat it up. Introduce the chicken and stir-fry for 5 minutes or until it is fully cooked.
