Prepare brown rice by following the instructions on the package, then allow it to cool down.
For the pineapple bowls, slice each pineapple in half and remove the flesh from both halves to create four bowls.
Trim a small portion off the bottom of each pineapple half to ensure they stand upright.
Dice the pineapple flesh into small chunks and set them aside for later use.
Preheat a nonstick wok over high heat; once it's hot, pour in some oil.
Introduce the shrimp to the wok and cook for a few minutes until they turn opaque, approximately 3 to 5 minutes; then remove them from the wok and set aside.
In the same wok, add the chopped scallions, chili, and garlic. Sauté for about 1 minute, then incorporate the rice, shrimp, and pineapple, stirring a few times to combine.
Pour in the soy sauce and fish sauce, stirring well to blend all the ingredients, and allow to cook for an additional 30 seconds.
Spoon the mixture into the prepared pineapple bowls and finish with a sprinkle of cilantro for garnish.
