Ingredients

  • 1 cup unbleached all-purpose flour, plus more for dusting
  • 2 teaspoons baking powder
  • 1 egg white
  • sesame seeds
  • 2 raw chicken Italian sausage links
  • 4 slices provolone or mozzarella cheese
  • 8 teaspoons pizza sauce or marinara
  • marinara sauce
  • 1 cup non-fat Greek yogurt
  • 3/4 teaspoon kosher salt

Instructions

    Begin by heating your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper or a silpat mat. If you opt for parchment, lightly spray it with oil to prevent sticking.

    In a medium-sized mixing bowl, whisk together the flour, baking powder, and salt until thoroughly combined.

    Incorporate the yogurt into the dry mixture, using a fork or spatula to blend until everything is well mixed (the texture will be sticky and resemble small crumbles).

    Sprinkle some flour onto a clean work surface and transfer the dough from the bowl. Knead the dough gently for about 15 turns until it becomes tacky but not overly sticky (it should not leave residue on your hands when pulled away). If the dough feels too sticky, add a little more flour as needed.

    Split the dough into four equal portions.

    Take one portion at a time, dust your rolling pin and work surface lightly with flour, and roll the dough into a circle measuring about 5 ½ inches in diameter and ¼ inch thick.

    Spoon 2 teaspoons of pizza sauce down the center of the circle, ensuring to leave a ½ inch border around the edges.

    Place a slice of cheese in the center, followed by half of a sausage link on top.

    Gently fold the sides of the dough up, wrapping one side around the sausage, then bringing the other side over to enclose it.

    Pinch the edges of the dough together to securely seal the sausage inside, and position the roll seam-side down on the prepared baking sheet.

    Continue this process with the remaining portions of dough, sauce, cheese, and sausage.

    Brush the tops of each roll with an egg wash, sprinkle with sesame seeds if desired, and bake for 25 to 30 minutes.

Notes & Tips

  • *I have not tested these with GF flour, but I have made the bagels with cup4cup and had great success so I am sure it will work. You may have to add 5 more minutes to the bake time.
