In a spacious, sturdy pot, heat olive oil over medium flame and sauté the garlic and onion for roughly 3 to 5 minutes, or until they become tender and translucent.
Incorporate the chorizo, diced tomatoes, wine, water, bay leaf, 1/4 cup of parsley, along with salt and pepper, then let the mixture simmer for 5 minutes.
Introduce the clams to the pot, stirring to combine, and then cover with a lid.
Allow to cook for about 5 minutes, or until all the clams have opened up (be sure to discard any that remain closed).
