Ingredients

  • 1 cup unbleached all purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup 2% cottage cheese
  • 1 egg white
  • optional: everything bagel seasoning, sesame seeds, poppy seeds, dried garlic flakes, dried onion flakes

    In a spacious mixing bowl, blend together the flour, baking powder, and salt, whisking thoroughly. Incorporate the drained cottage cheese and use a fork or spatula to combine until the mixture resembles small crumbles.

    With clean hands, gently knead the dough in the bowl until it forms a cohesive, smooth texture that feels tacky but not overly sticky, which should take about 2 minutes (it should not leave any dough residue on your fingers when you pull away).

    Split the dough into 4 equal portions. Shape each portion into ropes approximately 3/4-inch thick, then connect the ends to create bagels. (Alternatively, you can form a ball and create a hole in the center, then gently stretch it.)

    Brush the bagels with an egg wash and evenly coat both sides with your favorite seasoning.

    Lightly coat the air fryer basket with oil. Carefully place the bagels into the basket in batches, ensuring not to overcrowd, and air fry at 280°F for 15 to 16 minutes, or until they achieve a golden-brown color. There’s no need to flip them during cooking.

    Allow the bagels to cool for at least 15 minutes before slicing; this step is essential.

    Preheat your oven to 375°F. Line a baking sheet with parchment paper or a silicone mat. If using parchment, give it a light spray with oil to prevent sticking.
