Begin by setting your oven temperature to 350 degrees Fahrenheit. Prepare two baking sheets by lining them with parchment paper or silicone mats.
Adjust the oven racks so that one is positioned in the second slot from the top and the other in the second slot from the bottom.
In a medium-sized bowl, thoroughly mash the bananas until smooth.
Incorporate the oats, protein powder, egg, cinnamon, salt, vanilla extract, along with the peanut butter and chocolate chips. Use a fork to blend everything together until fully mixed.
Take a ¼ cup of the mixture and place it onto one of the prepared baking sheets, gently pressing down the top with the back of the measuring cup. Continue this process with the remaining mixture, ensuring there are 4 cookies on each sheet.
Bake in the preheated oven for 16 to 20 minutes, rotating the pans halfway through the baking time for uniform browning.
Once done, let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
