Ingredients

  • 1 medium yellow onion
  • 2 large cubanelle peppers
  • 10 garlic cloves
  • 1 bunch culantro
  • 1 tablespoon extra virgin olive oil
  • 1 large bunch cilantro
  • 1 large red bell pepper

Instructions

    Coarsely dice all the ingredients and place them in a sizable mixing bowl.

    Blend in a food processor or blender in approximately 4 to 5 separate batches until the mixture is finely chopped and has a semi-smooth texture, retaining some chunks. Avoid pureeing it completely. You might need to pause occasionally and use a spoon to stir the mixture for even blending. If necessary, add a couple of teaspoons of water to each batch to facilitate blending.

    Pour the sofrito into ice cube trays and freeze for future use.

    This mixture can be stored in the freezer for up to 6 months. It can also be kept in the refrigerator for up to 7 days.
