Begin by setting your oven to 325°F. Lightly coat a 9x5 inch loaf pan with baking spray to prevent sticking.
In a medium mixing bowl, whisk together the flour, baking soda, ground cinnamon, pumpkin spice, and salt. Set this mixture aside for later use.
In a larger mixing bowl, use an electric mixer to cream together the butter and sugar until the mixture is light and fluffy.
Incorporate the egg whites, whole egg, mashed bananas, pumpkin puree, and vanilla extract into the butter-sugar mixture, mixing at medium speed until the batter thickens. Be sure to scrape down the sides of the bowl to ensure everything is well combined.
Gradually add the flour mixture and nuts (if you’re including them), then mix on low speed just until everything is combined. Avoid overmixing to keep the bread tender.
Transfer the batter into the prepared loaf pan and place it on the center oven rack. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
