Ingredients

  • 2 tsp olive oil
  • 2 tbsp red bell pepper
  • 3 tbsp cilantro
  • 15 oz can black beans
  • 1/2 cup water
  • 1 bay leaf
  • few pinches cumin
  • pinch oregano
  • 1 tsp red wine vinegar
  • salt and black pepper to taste
  • 2 cloves garlic
  • 2 scallions
  • 1/2 onion

Instructions

    In a mini chopper or food processor, finely dice the onion, garlic, scallions, red bell pepper, and cilantro.

    Heat a medium pot over medium heat and pour in the oil.

    Introduce the chopped vegetables to the pot, sautéing them until they become tender, which should take around 3 minutes.

    Stir in the black beans, water, bay leaf, cumin, oregano, red wine vinegar, salt, and black pepper, then bring the mixture to a boil.

    Reduce the heat, cover the pot, and let it simmer for approximately 15 minutes, stirring occasionally and adjusting the water level as necessary.
