Ingredients

  • 1 tbsp sesame oil
  • 1 tbsp low sodium soy sauce
  • 1 teaspoon sriracha
  • 1-1/2 cups baby spinach
  • 1 tablespoon peanut butter
  • 1 large egg
  • sesame seeds
  • scallions
  • 1 clove garlic
  • 1 -1/2 teaspoons fresh ginger
  • 1 12 ounce package Palmini (hearts of palm) linguini

Instructions

    In a spacious nonstick frying pan, warm 1/2 tablespoon of oil over medium heat. Add the minced garlic and grated ginger, sautéing until aromatic, approximately 30 seconds.

    Incorporate the hearts of palm noodles, stirring well to combine.

    Pour in 1 tablespoon of soy sauce along with sriracha, and continue to stir-fry for 1 minute. Then, add the spinach and cook until it has wilted, which should take about 2 to 3 minutes. After that, push the mixture to one side of the pan.

    On the opposite side, place the peanut butter and allow it to melt for around 30 seconds before mixing it into the rest of the ingredients.

    Shift all contents to one side of the skillet.
