Ingredients

  • 2 4 oz snack cups mandarin oranges, in juice
  • 1 sprig mint
  • 2 tablespoons red wine vinegar
  • 2 medium beets
  • 1 1/2 tablespoons olive oil

Instructions

    Begin by spiralizing the beets; to avoid staining your hands, wear gloves. Start by peeling the beet and trimming off the stem end. Insert the thinner end into the spiralizer’s round blade, ensuring it’s centered. Use the blade with the smallest triangles to create your spirals. Once done, take a pair of scissors and cut the beet spirals into manageable 6-inch-long pieces for easier consumption.

    Drain the mandarin oranges, making sure to set aside 2 tablespoons of the juice. In a mixing bowl, whisk together the reserved juice, olive oil, and red wine vinegar. Add the beet spirals to the mixture and toss well, allowing it to marinate for 15 minutes.
