Ingredients

  • 4 cups baby red potatoes
  • 1/2 cup green bell pepper
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon reduced fat mayonnaise
  • kosher salt and fresh pepper
  • 3 scallions
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 cup red onion

Instructions

  1. 1

Fill a pot with water, adding a generous amount of salt, and bring it to a rolling boil. Introduce the potatoes and let them cook until they are tender, which should take about 10 minutes. Once cooked, drain them well.

After draining the potatoes, transfer them to the bowl containing the dressing. Gently fold in the chopped scallions and adjust the seasoning with extra salt and pepper if needed.

  4. 4

This salad can be enjoyed at room temperature or chilled in the refrigerator until you’re ready to serve.
