Preheat your oven to 450°F (232°C).
Take the Brussels sprouts and discard any yellow or damaged outer leaves. Next, trim off the ends of the cores and slice each sprout in half lengthwise.
In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, and pepper, ensuring they are well-coated. Then, arrange them on a rimmed baking sheet lined with parchment paper, placing them cut side down and spaced apart.
Roast the sprouts in the oven until they are tender and have developed a golden-brown color, which should take approximately 15 to 18 minutes, depending on your oven's performance, the size of the sprouts, and your preferred level of doneness. If you like them to retain a bit of crunch, start checking at around the 10-minute mark.
For an extra burst of flavor, return the hot roasted Brussels sprouts to the mixing bowl. Add lemon juice and either Parmesan or Romano cheese, then toss everything together until thoroughly mixed.
Adjust the seasoning to your liking, adding more salt if needed, and serve immediately.
