Ingredients

  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • 2 slices center-cut bacon
  • ¼ cup freshly grated Parmesan cheese
  • Chopped Italian parsley
  • 1 small red onion
  • 1 ½ tablespoons extra-virgin olive oil
  • 20 ounces peeled and cubed butternut squash

Instructions

    Begin by preheating your oven to 400 degrees Fahrenheit. Lightly coat a large baking sheet with cooking oil.

    In a spacious mixing bowl, combine the butternut squash, onion, oil, and season with salt and pepper according to your preference. Gently toss everything together until well coated.

    Transfer the mixture onto the prepared baking sheet, spreading it out into a single, even layer. Place it in the oven and roast for 20 minutes.

    After 20 minutes, carefully take the baking sheet out of the oven. Add the bacon and 2 tablespoons of Parmesan cheese. Using a spatula, mix the vegetables with the bacon and cheese until evenly distributed.
